Golden sausages, and easy-as mini meringues...


Golden Sausage Casserole

Easy recipe for a tasty meal..

2T flour
2T vinegar
1T worcestershire sauce
2T tomato relish or sauce
1T sugar
4-6 sausages (up to 8 we do!)
2C boiling water
salt and pepper

Put sausages into casserole dish. In another bowl mix all other ingredients except water together to form smooth paste. Add boiling water. Then pour over sausages and cook at 200 for 1 hour....
Easy, yummy.


Economical Meringues

1 large egg white
3/4 C sugar
1t vinegar
1t vanilla essence
2T boiling water

Stand a small bowl in a larger bowl with very hot water in it. Measure all ingredients into smaller bowl. Beat with electric beater until mixture is smooth and piled high.

Run a piece of baking paper under water, and place it wet side down on baking tray.

Use a forcer bag, or use a plastic bag with corner snipped off, or two teaspoons, and make 50-60 shapes with the meringue mixture.

Bake at 130-240 for an hour or so until they are dried out.

These will keep for ages in a air tight container, and no kids.

Sundried Tomato Bread

No photo sorry - we ate it!

Recipe is as follows, and can be done in bread maker - follow the normal way you add ingredients to the machine - ie wets first, then dry then yeast..

3tsp yeast
1C warm water
1/4C tomato paste
2tsp sugar
1tsp salt
2T lecithin granules or oil
1C wholemeal flour
2C high grade flour
1/4C chopped sun-dried tomatos
1T chopped fresh basil (optional)

You can put it into bread make and cook as normal loaf, or use dough setting, then take out and shape and cook at 200 for about 30 mins..

Comes out reasonably red-ish looking.

Great with pasta
